Italian Style Orzo Salad

Ingredients:
- 1 cup cooked orzo
- 1 cup cherry tomato halves
- 1 cup grilled chicken breast cut in cubes
- ½ cup thinly sliced red onions
- 1 tbsp. Italian herbs
- 2 tbsp. coarsely chopped basil leaves
- ½ cup fresh crumbled mozzarella cheese
- Juice of 1 lemon
- 3 tbsp. olive oil
- Salt & pepper to taste
Orzo Cooking Instructions:
- Bring 1½ cup of water to a boil in a saucepan.
- Add 1 cup of orzo, ⅛ teaspoon of salt, and 1 teaspoon of butter or olive oil (if desired).
- Cover saucepan and let simmer for 10-14 minutes. Fluff with fork and leave aside.
Directions:
Season the raw chicken breast with salt and pepper. In a hot skillet, drizzle some olive oil and grill the chicken breast cubes until well cooked. Put aside.
In a large bowl, mix together the cooked orzo, the cherry tomatoes, the red onions, the grilled chicken, the Italian herbs, the basil leaves, the lemon juice, the olive oil, and salt and pepper. Chill in the refrigerator.
To plate: Garnish with crumbled mozzarella cheese and basil leaves. Enjoy!
