Directions:

In a large cooking pan on medium heat, cook the onions in olive oil for 1 minutes until they soften and develop a nice colour.

Add the red peppers, the eggplant, the parsley, the coriander, the paprika, and cook for 5 minutes, while stirring occasionally. Add the zucchini, the vegetable broth, and salt and pepper. Cook until all the vegetables are well cooked and tender.

To plate: Serve the vegetable stew on top of the warm pearl couscous. Enjoy!
