Carrots & Green Peas Couscous Salad

Servings: 4 servings
Ingredients:
- 1 cup cooked couscous
- 1 cup cooked carrot pieces
- ½ cup cooked green peas
- 1 cup tomatoes
- ½ cup chopped parley
- ½ tsp garlic powder
- 2 tbsp. juice of a lemon
- 3 tbsp. olive oil
- Salt and pepper to taste
Couscous Cooking Instructions:
- Bring 1 cup of water to a boil in a saucepan.
- Add 1 cup of pre-cooked couscous, ⅛ teaspoon of salt, and 1 teaspoon of butter or olive oil (if desired).
- Remove from heat, cover saucepan and let sit for 4-5 minutes. Fluff with fork and leave aside.
Directions:
In a large bowl, mix the cooked carrot pieces, tomatoes, cooked green peas, and the chopped parsley. Add the couscous, the lemon juice, the olive oil, and salt and pepper to taste. Mix everything together until the couscous is well coated.
Chill in the refrigerator and enjoy!
