Pomegranate & Mint Couscous Salad

Servings: 4 servings
Ingredients:
- 1 cup cooked couscous
- 1 cup cucumber cubes
- ½ cup chopped orange bell peppers
- ¼ cup chopped red onions
- ½ cup pomegranate seeds
- ¼ chopped mint
- 2 tbsp. juice of a lemon
- 2 tbsp. juice of an orange
- 2 tbsp. canola oil
- 1 tbsp. olive oil
- Salt and pepper to taste
Couscous Cooking Instructions:
- Bring 1 cup of water to a boil in a saucepan.
- Add 1 cup of pre-cooked couscous, ⅛ teaspoon of salt, and 1 teaspoon of butter or olive oil (if desired).
- Remove from heat, cover saucepan and let sit for 4-5 minutes. Fluff with fork and leave aside.
Directions:
In a large bowl, mix the cucumbers, the orange bell peppers, the red onions, the pomegranate seeds, and the mint. Add the couscous, the lemon juice, the orange juice, the canola oil, and salt and pepper to taste. Mix everything together until the couscous is well coated.
Chill in the refrigerator and enjoy!
