Cucumber, Mint & Seeds Couscous Salad

Servings: 4 servings
Ingredients:
- 1 cup cooked couscous
- 1 cup cucumber cubes
- 1 cup chopped parsley
- ½ cup chopped red onions
- ½ cup sunflower seeds
- ¼ chopped mint
- 2 tbsp. juice of a lemon
- 3 tbsp. olive oil
- Salt and pepper to taste
Couscous Cooking Instructions:
- Bring 1 cup of water to a boil in a saucepan.
- Add 1 cup of pre-cooked couscous, ⅛ teaspoon of salt, and 1 teaspoon of butter or olive oil (if desired).
- Remove from heat, cover saucepan and let sit for 4-5 minutes. Fluff with fork and leave aside.
Directions:
In a large bowl, mix the cucumbers, the chopped parsley, the red onions, the mint, and the sunflower seeds. Add the couscous, the lemon juice, the olive oil, the onion powder, and salt and pepper to taste. Mix everything together until the couscous is well coated.
Chill in the refrigerator and enjoy!
