Vegetable Pearl Couscous Casserole

Ingredients:
- 1 cup dry pearl couscous
- ½ cup chopped canned tomatoes
- ½ cup chopped celery
- ½ cup chopped onions
- ¼ cup chopped parsley
- 1 tbsp. chopped coriander
- 2 minced garlic cloves
- 3 tbsp. olive oil
- Salt and pepper to taste
Directions:
Preheat oven to 370 Fahrenheit (187 Degrees Celsius).
In a medium size casserole with a cover, add 2 cups of water, the dry pearl couscous, and all of the remaining ingredients. Stir everything together and cover.
Put in the oven for 15 minutes. When the pearl couscous absorbs all the water, and when the vegetables have softened, remove from oven.
Let cool for a few minutes and serve. Enjoy!
