Ratatouille Pearl Couscous

Ingredients:
- 1 cup cooked pearl couscous
- 1 cup eggplant cubes
- 1 cup red peppers cubes
- 1 cup zucchini cubes
- ½ cup finely chopped onions
- 1 tbs. finely chopped parsley
- 1 tbsp. finely chopped coriander
- ½ cup vegetable broth
- 1 tsp. paprika
- ½ tsp. cumin
- 3 tbsp. olive oil
- Salt & pepper to taste
Pearl Couscous Cooking Instructions:
- Bring 1½ cup of water to a boil in a saucepan.
- Add 1 cup of pearl couscous, ⅛ teaspoon of salt, and 1 teaspoon of butter or olive oil (if desired).
- Reduce heat and simmer covered for 10-12 minutes. Fluff with fork and leave aside.
Directions:
In a large cooking pan on medium heat, cook the onions in olive oil for 1 minutes until they soften and develop a nice colour.
Add the red peppers, the eggplant, the parsley, the coriander, the paprika, and cook for 5 minutes, while stirring occasionally. Add the zucchini, the vegetable broth, and salt and pepper. Cook until all the vegetables are well cooked and tender.
To plate: Serve the vegetable stew on top of the warm pearl couscous. Enjoy!
