Sun-Dried Tomatoes and Saffron Orzo

Ingredients:
- 1 cup uncooked orzo
- 2 cups hot water
- ½ cup chopped sundried tomatoes
- ¼ tsp. saffron
- ¼ cup chopped coriander
- ¼ cup chopped onions
- Salt & pepper to taste
Directions:
In a large cooking pan over medium heat, cook the onions in olive oil for 1 minutes until they soften and develop a nice color.
Add the water, the coriander, the saffron, and salt and pepper. Cover and let simmer for 10-14 minutes or until the orzo absorbs all the water.
To plate: serve warm in a bowl and garnish with sundried tomatoes. Enjoy!
