Smoked Salmon & Capers Orzo Salad

Ingredients:
- 1 cup cooked orzo
- Smoked salmon
- ¼ cup capers
- ½ cup thinly sliced radish
- 1 cup mixed-greens
- ¼ cup green onions
- ½ cup cherry tomato halves
- Juice of 1 lemon
- 3 tbsp. olive oil
- Salt & pepper to taste
Orzo Cooking Instructions:
- Bring 1½ cup of water to a boil in a saucepan.
- Add 1 cup of orzo, ⅛ teaspoon of salt, and 1 teaspoon of butter or olive oil (if desired).
- Cover saucepan and let simmer for 10-14 minutes. Fluff with fork and leave aside.
Directions:
In a large bowl, mix together the cooked orzo, the capers, the radish, the mixed-greens, the green onions, the cherry tomatoes, the lemon juice, and salt and pepper.
Chill in the refrigerator and top with smoked salmon before serving. Enjoy!
