Chorizo Orzo Soup

Ingredients:
- 1 cup uncooked orzo
- 6 cups hot water
- 1 cup chorizo (cut into rounds)
- ½ cup canned tomato chunks
- ½ cup chopped onions
- 3 bay leaves
- 1 tbsp. Italian herbs
- 1 tbsp. chili flakes
- 2 tbsp. olive oil
- Salt & pepper to taste
- 2 tbsp. sun dried tomato for garnish
Directions:
In a big pot over medium heat, cook the onions in olive oil for 1 minutes until they soften and develop a nice color.
Add the chorizo, the canned tomato chunks, the Italian herbs, the bay leaves, and the hot water. Cook for about 10 minutes. Add the orzo, and cook for another 10-12 minutes or until the orzo is tender.
Serve into bowls and garnish with chili flakes and sun dried tomatoes. Enjoy!
